We have a winner in the student-led Meal Prep Challenge

The “likes” are in, and student Alissa Miro gets the $100 gift card.

But we’re all winners! We can get inspired to cook and eat healthy with more than a dozen recipes and accompanying nutrition facts posted for the contest created by TCOM and TCU students.

Intent on continuing the success of the interprofessional TCU/UNTHSC Culinary Medicine program, they created the Six-Week Meal Prep Challenge on Facebook, and invited the entire UNTHSC community to join in.

The interprofessional course in Culinary Medicine is a popular elective in which TCU and UNTHSC students work together to learn how to help their future patients prepare healthy, affordable meals.

When the challenge ended on July 14, Miro had garnered 43 likes, with her pineapple salsa slow cooker chicken, mango shrimp with rice, “bruschetta” chickpea pasta salad, and chicken and quinoa.

Lianne Wagner came in second, garnering 27 likes with pad Thai and banh mi rice bowls.
